When that nozzle allows the refrigerant to exit, un-pressurized, into an open chamber, it becomes a gas again and withdraws all that heat energy it released when compressed. However, since the fluid was cooled, it takes heat from the surrounding environment, making the chamber and the air around it cool, which your fan then blows into your cabin.
